Get ready for a fun and flavorful eruption on your dinner table! These individual-sized meatloaves are baked in a muffin tin and have a “lava” center of bubbling marinara sauce, making them a creative and delicious meal.


Ingredients

  • For the Meatloaves:
    • 1 1/2 pounds lean ground beef or turkey
    • 1/2 cup plain breadcrumbs
    • 1/2 cup milk
    • 1 egg, lightly beaten
    • 1/4 cup finely chopped onion
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon dried oregano
    • Salt and black pepper to taste
  • For the ‘Lava’:
    • 1/2 cup marinara sauce, or a tangy barbecue sauce

  • Muffin tin (standard size)
  • Large mixing bowl
  • Spoon

Instructions

  1. Preheat and prepare. Preheat your oven to 375°F (190°C). Lightly grease a standard muffin tin.
  2. Mix the meatloaf. In a large bowl, combine the ground meat, breadcrumbs, milk, egg, chopped onion, garlic powder, oregano, salt, and pepper. Mix with your hands until everything is just combined. Be careful not to overmix.
  3. Form the volcanoes. Divide the meatloaf mixture evenly into the muffin cups, pressing it down lightly to form a solid base.
  4. Create the ‘crater’. Using the back of a spoon or your thumb, make a small, deep indentation in the center of each meatloaf, creating a “crater” for the lava.
  5. Fill with ‘lava’. Spoon about a tablespoon of marinara sauce into each crater.
  6. Bake. Place the muffin tin in the preheated oven and bake for 25-30 minutes, or until the meatloaves are cooked through and the sauce is bubbling and “erupting.”
  7. Serve. Let the mini meatloaves cool for a few minutes before serving. You can serve them with a side of mashed potatoes, which can be arranged on the plate to look like the “mountain” surrounding the volcano.
